Relationship Status: Cooking For One

We’ve all been there one too many times: single for Valentine’s Day. Though usually we forget about ‘single awareness day’ because it falls during Mardi Gras – this year though, among the many unfortunate things happening, is the fact that Mardi Gras does not coincide with Valentine’s Day. And although sometimes for V-Day you go out and get drunk with your friends, sometimes you just want to stuff your face by yourself, put on Bridget Jones Diary & drink all of the wine.

So, to make this yearly ritual less un-glamorous, we’ve put together a sexy meal for one. For you to enjoy and hopefully be distracted with cooking, and not texting your ex.

Main Course: Sexy Shrimp Scampi

(Makes One Serving)


15 medium shrimp – peeled and deveined

1 tablespoon of olive oil

1 tablespoon of butter – melted

1 clove of garlic, minced

3 tablespoons of finely chopped green onions

1 tablespoon freshly squeezed lemon juice

1/2 teaspoon flat leaf parsley, finely minced

1/4 teaspoon kosher salt

1/4 teaspoon ground black pepper

A splash of white wine – don’t be ashamed of drinking from the bottle afterwards

​1/4 of a box of your favorite pasta, such as fettucine or penne, cooked according to package directions

freshly grated Parmesan cheese

crushed red pepper flakes


Heat olive oil in a small pan over medium heat. Add the garlic and cook, stir often, until garlic is pale golden. Add the green onions, salt, and pepper to taste and cook for about two minutes. Add half the wine and bring to a boil. Stir in the lemon juice and continue to cook until almost all the liquid has evaporated. Remove from heat and cool completely. Add the butter and minced parsley and combine thoroughly.

Preheat oven to 400˚F. Use the mixture you made before to grease the bottom of a small baking dish. Place the shrimp in the baking dish in a single layer. Season with salt and pepper and roast for 5 – 7 minutes, until the shrimp are opaque in the center.

Start cooking your pasta once the shrimp is in the oven.

Remove the shrimp from the oven and onto a pan and keep warm; drain the shrimp’s cooking juices into a small pan, and bring to a boil. Toss the pasta with sauce and top with shrimp. Add parmesan cheese and hot pepper flakes & more green onions.

A Happy Ending: 3 Ingredient Banana Nutella Ice Cream


2 frozen bananas

½ teaspoon vanilla

¾ cup Nutella


Cut bananas into 1-inch slices. Place them on a parchment paper lined cookie sheet and freeze until completely frozen.

We recommend you pop these bananas in the freezer that morning (so your happy ending is rock solid 😜 )

Transfer frozen bananas to the food processor. Process them until the mixture becomes smooth and looks like ice cream. Add the Nutella and vanilla. Pulse the mixture until fully combined. Press play on your next Netflix movie, grab a giant spoon and eat right away.

If you’re too tipsy from the wine – you can always just dip your giant spoon into the jar of Nutella.

Cheers to treating and loving yourself. Valentine’s Day doesn’t have to be depressing EVER. We all know boys will never be as good as that second glass of wine, or a full pint of our favorite ice cream.
