Let’s face it, being healthy all week long is hard. Most of us have a sweet tooth, and we want to indulge after eating good every day and hitting the gym. And with these summer months coming up, sometimes there’s nothing better than a few scoops of ice cream to calm our sweet cravings. We recently discovered a way to make ice cream that doesn’t involve milk, cream or sugar. Yes babes, healthy ice cream (aside from Halo Top #ourweakness) exists!
And here’s how to make it. You’ll just have to be a bit patient (it’ll be in the freezer for a few hours).
- 4 bananas
- 3/4 cup of your favorite peanut butter (preferably all natural peanut butter)
- 1 tablespoon of vanilla
Slice the bananas into 1-1 ½ inch slices and spread on a baking pan.
Freeze the sliced bananas for about 2 hours.
In a blender, add the banana slices, the peanut butter and the vanilla. Blend until the mixture is smooth.
Transfer the mixture into the same baking pan or a container lined with saran wrap, cover it and freeze for another hour, or until you’re ready to eat it.
Scoop out your healthy ice cream.
